From Farm to Cup:
El Mirador, located in the village of El Portal, is a 31-hectare farm managed by Elkin Guzman, who has over 70 years of family history in Colombian coffee. Elkin’s approach to coffee processing is based on more than a decade of post-harvest research. For each lot, Elkin’s team carefully selects the best processing method to highlight each coffee’s unique qualities.
The Strawberry Natural Process:
For this Catiope coffee, cherries are picked only when they reach 20+ degrees Brix, ensuring peak ripeness. After a detailed sorting, the cherries undergo a 330-hour fermentation with a strawberry-infused culture, which involves microorganisms cultivated with molasses and strawberries. This unique blend enhances the natural fruitiness of the coffee, bringing out the complex, sweet strawberry flavors in each cup.
